應該說單寧(tannins)是一類化合物....定義為
1.oligomeric compounds with multiple structure units with free phenolic groups
2.molecular weight ranging from 500 to >20,000
3.soluble in water, with exception of some high molecular weight structures,
ability to bind proteins and form insoluble or soluble tannin-protein complexes
而chlorogenic acid有可能是其中一種(不確定)
因為第三點後面蠻重要的.....
