酵素活性單位有許多種，定義也不同：
(1)IU(international unit):25C下 一分鐘內將10*-6mole的受質分解並產生10*-6mole
的生成物，為1IU
(2)SA:1mg enzyme 以IU為單位的值
(3)MA：1min 25C下 1分子enzyme所作用掉的受質分子數目
(4)TON：(=MA)
