Yeah, many proteins unfold at pH values less than 5 and greater
than 10. (1)It usually occurs because the folded protein has
groups buried in nonionized form that can ionize after unfolding.
(for example, His->unfold at extreme acid pH, Tyr->unfold at
extreme alkaline pH). (2)Extreme pH disrupts salt bridges thus
reduce the stability of the protein.
