我覺得第一句對
第二句應該去掉"that of"
his taste is quite different from his brother's (taste).
後面的taste是可省掉的 因為his brother's變成一個所有格代名詞

這邊是
she's a friend of his (friends).
也是原本 '所有格加名詞' 去掉重複累贅的名詞friends
'his'就變成所有格代名詞了
第一個句子可能你覺得怪怪的
不過英文的所有格基本上就這兩種表示方式 用 's (或my your...)
或是用一種 genitive of
第一句的 that of his brother 是 the taste of his brother
