標題[食譜] 自己作水餃皮

水餃是我最愛的食物,在國外水餃皮買不到新鮮的,分享一下作水餃皮心得,
因為住在國外用英文比較多,
所以食譜是用英文寫的,不過應該不難懂,如果真的閱讀有困難又很想要食譜的

If you ask me about the proportion of flour and water, I have to say,
it really depends on what kind of humidity and what kind of flour you use.
The flour is kind of important, I chose to mix medium density flour
(中筋) with a little low density (低筋) flour.
To mix the flour with water, you can start with 250g flour and 125cc warm
water, then start rubbing it. Add water if it's too dry or add flour if it's
too wet, make sure the pastry is kind of smooth (if you are in the US, the
humidity is low, so make sure you add enough water from time to time while
you are rubbing). After you made something like the picture above, cover
with wet cloth and wait for about 30 minutes for it to be set.
After about 30 minutes, make the pastry in column shape, then use butter
knife to cut into pieces to about 3cm long, then flatten with hands first
to make it a circle shape, then flatten again with a rolling pin to make
the circle to about 7cm diameter. After you made a circle shape,finally,
flatten edge again to make sure that the center is thicker then the edge,
then you are done with the pastry part.
Wrap it with the filling, then boil them in the water, now you can enjoy
the fresh dumplings!!!
如果你要問我水和麵粉的比例,我只能說那要看房間濕度和你用的麵粉品質,
選麵粉是很重要的,這個食譜我主要用了中筋麵粉和一點低筋麵粉。
剛開始可以用250g的麵粉加上125cc的溫水,然後開始揉麵糰,
如果太乾就加水太濕就加麵粉,直到麵糰呈現滑滑的狀態(假如你在美國,水要持續加,
因為比較乾)一直到如圖所示般,就可以用濕巾蓋起來等30分鐘。
30分鐘後,把作好的麵糰作成長長的圓錐狀,再用奶油刀切成小塊約3cm長,
先用手壓成圓形然後用桿麵棍壓平約7cm直徑,接著在把邊邊都再壓平些讓中間比較厚。
這樣就完成了,再把餡包進去就可以煮新鮮的水餃囉!!!
