我猜你可能記錯了，或者是搞混了
單數用that，複數用those，那個應該是「在有範圍內代替前面已出現過的名詞」
例如
The weather in Tainan is warmer than that in Taipei.
= the weather
台南的天氣比台北的天氣溫暖。
that用來代替前面提到的不可數名詞the weather
The ears of rabbits is longer than those of dogs
= the ears
兔子的耳朵比狗的耳朵長
those用來代替前面提到的複數可數名詞the ears
